Almond Butter & Dark Chocolate Energy Bites

These sweet and savoury Almond Butter & Dark Chocolate Energy Bites are a perfect balance of natural sweetness, protein, and fiber, making them a great snack for stabilizing blood sugar levels while satisfying sweet cravings. Made with ingredients like oats, almond butter, and dark chocolate, these no-bake bites are rich in healthy fats and antioxidants. The combination of fiber and protein ensures a slow energy release, making them ideal for a pre-workout snack, an afternoon pick-me-up, or a healthy dessert. Plus, they are quick to prepare and can be stored for on-the-go convenience!

Ingredients

  • 1 cup (90g) rolled oats
  • ½ cup (120g) almond butter (or peanut butter)
  • ¼ cup (60ml) honey (or sugar-free syrup)
  • 1 tsp vanilla extract
  • ¼ cup (30g) dark chocolate chips (70% cacao or higher)
  • 1 tbsp chia seeds (optional, for fiber boost)
  • 1 tbsp flaxseeds (optional, for omega-3s)
  • ¼ tsp cinnamon

*Nut-free option: Substitute almond butter with sunflower seed butter

*Lower-carb option: Reduce honey and replace with monk fruit sweetener or sugar-free syrup

*Vegan option: Swap honey for maple syrup or agave nectar.

*Gluten Free: Use certified gluten-free oats since regular oats may have cross-contamination with gluten.

*Nut-Free options: Sunflower seed butter (best option for a similar texture and mild taste), Pumpkin seed butter (higher in protein and slightly earthy in flavor), Tahini (sesame seed butter) (adds a slight bitterness but works well in energy bites).

Instructions

  1. Mix ingredients: In a large bowl, combine rolled oats, almond butter, honey, vanilla extract, chia seeds, flaxseeds, and cinnamon. Stir until well combined.
  2.  Add chocolate chips: Gently fold in the dark chocolate chips to evenly distribute them.
  3. Form the bites: Using a spoon or your hands, scoop out small portions and roll them into bite-sized balls (about 1 inch in diameter).
  4. Chill to set: Place the energy bites on a lined baking sheet or plate and refrigerate for 30 minutes to firm up.
  5. Store & enjoy: Keep in an airtight container in the fridge for up to a week, or freeze for longer storage.

TIPS

Lightly moisten your hands with water or a touch of coconut oil before rolling the bites—this prevents sticking and makes shaping them much easier! 😊
