Cookie Dough Protein Bites

These Cookie Dough Protein Bites are tiny balls of sweet, chewy goodness that taste like dessert but keep you energized. They’re quick to make, fun to eat, and perfect for tossing into your lunchbox or grabbing on the go!

Ingredients

(12 bite-sized balls (servings). If you make them larger, you may get 10, and if smaller, 14–16.)

  • 1 cup almond flour
  • ½ cup peanut butter or almond butter
  • 2-3 tbsp honey or sugar-free maple syrup
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract Pinch of salt 2-3 tbsp mini (or normal-sized) sugar-free chocolate chips

Gluten-free: Use GF protein powder and GF chocolate chips or swap for dried fruit.

Instructions

  1. Mix the almond flour, protein powder, and salt in a bowl.
  2. Add peanut butter, honey, and vanilla. Stir until a dough forms.
  3. Fold in the chocolate chips.
  4. Roll into small bite‑sized balls.
  5. Chill in the fridge for 20-30 minutes to firm up.
  6. Store in an airtight container in the fridge for up to a week.

TIPS

1. If the dough feels dry, add a tiny splash of milk.
2. If it’s too sticky, add a little more almond flour.
3. You can swap chocolate chips for sprinkles, crushed pretzels, or dried fruit. (Just know that some alternatives may affect carb counts.)
4. This is more blood sugar-friendly because the protein and fat slow down how fast the carbs are digested!
