Crunchy Peanut Butter Apple Energy Bites

This is a snack that literally anyone would eat: kids, teens, adults, and it’s diabetes-friendly. These no-bake energy bites are sweet from fruit (not added sugar), have fiber, healthy fats, and protein to help keep blood sugar more stable, and they’re super easy to make.

Ingredients

Makes 12 bite-sized balls

  • 1 cup natural peanut butter (no added sugar)
  • 1⁄2 cup unsweetened almond flour
  • 1⁄4 cup ground flaxseed
  • 1⁄4 cup finely chopped apples (small pieces)
  • 1 tablespoon chia seeds
  • 1⁄2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons unsweetened plant milk (if needed for texture)

*Swap peanut butter for almond butter for a peanut-free option.

Instructions

  1. In a medium bowl, mix the peanut butter, almond flour, and ground flaxseed until combined.
  2. Add chopped apples, chia seeds, cinnamon, and vanilla extract. Mix everything together.
  3. If the mixture feels too dry, add 1 tablespoon of plant milk at a time until it’s soft but not sticky.
  4. Roll into small bite-sized balls (about 1 inch).
  5. Place them in the fridge for 20–30 minutes so they firm up.
  6. Store in an airtight container in the fridge and enjoy whenever you want a snack.

TIPS

1. Peanut butter adds protein and healthy fats, which help slow down sugar absorption.
2. Flaxseed and chia seeds add extra fiber.
3. Apples give natural sweetness without added sugar.
4. Portion control still matters. 1–2 bites at a time is a good serving.
