Fro-Yo Bites

Fro-Yo Bites are a delicious and nutritious treat that’s perfect for anyone looking for a healthier snack option! They provide a great source of protein and probiotics, which support gut health and help maintain balanced blood sugar levels. The mix of fresh berries adds natural sweetness, fiber, and antioxidants, which are essential for boosting the immune system and promoting overall well-being. With a touch of honey and vanilla, this snack offers a satisfying flavor while still being low on the glycemic index. It’s a refreshing way to enjoy a guilt-free dessert that fits into a balanced lifestyle on campus!

Ingredients

  • 1½ cups of plain yogurt
  • ¼ cup of whole milk
  • 2 tablespoons of honey
  • ½ tablespoon of pure vanilla extract
  • ½ cup of blueberries
  • ½ cup of strawberries (cut into quarters)
  • ½ cup of raspberries

Dairy-Free option: use coconut yogurt with oat or almond milk.
Vegan option: Same as dairy-free, and swap out honey for maple syrup.

Instructions

  1. In a medium bowl, combine yogurt, milk, honey and vanilla and whisk until smooth.
  2. In an ice cube tray, distribute fruit in each of the cube molds.
  3. Spoon yogurt mixture over the fruit, filling molds completely.
  4. Freeze for 5 hours, or until frozen solid.

TIPS

Mix in a sprinkle of granola for a breakfast-inspired twist! For a trail mix flavor, add chocolate chips, dried berries, raisins, goji berries, and a handful of nuts. Incorporate some protein powder into your yogurt mixture for an extra protein boost.
