Easy Baked Tomato Feta Pasta

This easy baked Tomato Feta Pasta is a quick and delicious dish that’s perfect for busy weeknights. The combination of sweet cherry tomatoes, creamy feta cheese, and fresh basil creates a flavorful sauce that pairs perfectly with your favorite pasta. With just a handful of ingredients and a simple bake-and-mix process, you’ll have a delightful meal ready in no time!

Ingredients

  • 2 cups of washed cherry tomatoes
  • 2 tablespoons of olive oil
  • 2 teaspoons salt and pepper
  • 1 tablespoon of fresh diced garlic
  • 2 blocks of feta cheese
  • 3 leaves of fresh basil diced to sprinkle on top
  • ¼ cup of parmesan cheese to sprinkle on top
  • 8 oz (227g) dry pasta of choice (or 4 cups cooked pasta).

*Low Carb, Gluten Free options: Replace pasta with gluten free pasta or spaghetti squash.

Instructions

  1. Place the cherry tomatoes in a baking dish and add some black pepper, salt, and fresh diced garlic and give them a good toss until they are well combined.
  2. Add a block of feta cheese in the middle of the dish, around the cherry tomatoes and drizzle the ingredients with olive oil.
  3. Bake this at 400° for 30 minutes until the cheese is soft and the tomatoes are juicy.
  4. Give everything a good mash.
  5. Boil your choice of pasta until al dente and then stir the pasta into the tomato and feta cheese dish.
  6. Finish it off with some fresh basil and a sprinkle of parmesan cheese.

TIPS

If substituting pasta for spaghetti squash, follow these instructions:
Cut spaghetti squash in half, scoop out seeds and brush with oil. Place half of the remaining ingredients in each half of the squash and bake at on a baking tray lined with parchment paper at 400F for 30-45 mins, or until the squash is soft but slightly resistant when stabbed with a fork. Scrape the strands of squash with a fork, while mixing with the rest of the ingredients.
